On vacation, my husbands cousin gave me a great book - Legends of Texas Barbecue Cookbook. I am finally cooking from it. Today all I did was make a rub from it to use on pork chops, on the grill of course. I'm about to bring everything out and start the coals but I wanted to post this: Stubb's Hot Pork Rub Stubb's Barbecue, Red River Street, Austin, TX Makes 2-2/3 cups 1 cup salt 1/4 cup chili powder (I used a cheapy brand I need to get rid of and a touch of homemade pure chile) 1/4 cup paprika 1/3 cup garlic powder 1/3 cup cayenne 1/2 cup ground dried rosemary 1/2 cup ground black pepper Combine all ingredients and store in a shaker. I tasted this and it is mild but good. A good all-purpose pork rub. Can't wait to taste it on the pork! Review to come.
