I made this for tonight's dinner. I've already tasted the final product and it is very good. Vencil's Slow Beans Vencil Mares, The Taylor Cafe, Elgin, TX Makes 6 cups I cut the recipe in half. 2 cups dried pinto beans 1/2 onion, finely chopped 1 tbsp chili powder 1 tsp ground black pepper 1 cup finely chopped cooked bacon 1 tsp salt, or more to taste 6 cups water Sort the beans to remove any stones or grit. Rinse in a colander and place the beans in crockpot with 6 cups of water. Add the onion, black pepper, chili powder, bacon and salt. Cook on HIGH for 2 hours. Lower to LOW and cook for another 8 hours or overnight.* Add more water as needed. Risa's notes: * My crockpot seems to cook things very quickly. 4 hours after I started the dried beans they were soft and done. I added some salt, after the cooking, not during. Rumor has it that cooking dried beans with salt toughens them. I haven't tested that out so I don't know if it is true. These are mighty-tasty beans!
