Made a great batch of 'pico' tonight. Looks life frost here on the ND tundra, picked a bunch of tomatoes, peppers. pulled the last of the onions. Yummy time. Hand diced a 3-4 pounds of tomatoes, drained for a bit Minced the following in the food processor 4 bell peppers two onions, big sweet spanish type big handful of serrano peppers ( did I say a big handful) double handful tomatillos Snuck a bit out and chopped a little cilantro in for myself-- between the cilantro and tomatillos made for a nice citrus like flavor. Made a good supper. I'm not vegetarian, but I could eat like this often. Nels in ND
