Great news...Thai Market (just a 30sec drive from here) finally got in some of the fresh HOT Thai peppers (instead of those big, fat, mild ones...bleah! what a waste!)...and I almost emptied the shelf (after a few days, I'll finish the job if someone else hasn't already done so). Problem: I can't remember how to make a mash from fresh peppers.... Ideally, I'd like the look, texture, and taste to be as close to fresh, chopped peppers, as that's what I plan on using them as (e.g., in Pad Thai, etc.). I'd rather not freeze them, as they end up getting all mushy. Suggestions?
