<So how do we define "moderation"?  Is it based on the individual's
tolerance levels?  Or is it based strictly on a set range of Scoville
units?

You're right, Jim G.  That's why some people actually leave the Corps and 
are enticed to the dark side; their tolerance has become great and their 
pain level greater!  But, for the most part, moderation means all the things 
I mentioned previously, no matter what pepper we consume.
