You've got a good point there, but I suspect a newbie can even
get a WSM to spike up and down, etc. On the other hand, doing
real Q in a Weber/kettle-type grill with indirect coals can be
pretty educational (I've done it a few times in a pinch).

It's really the schiznit for long/overnight cooks but the
WSM is already easily controllable, you can certainly live
without it. But, once you use one, you'll want one.
