Marilyn, Linda has a good suggestion to consider Thai recipes. For several years, until his death in December of 1997, Colonel Ian F. Khuntilanont-Philpott was a major contributor of Thai recipes. Many of the recipes are by his wife, Muoi Khuntilanont, a professional chef. Several people have collected these recipes in the form of a MS Word documents. One such collection, containing 163 recipes, was obtained by me on 1/17/99. Nearly all of the recipes include chiles and range from mild to very hot. To maximize accessibility, I have now converted this collection to HTML and placed it online. For convenience, it also includes an alphabetized, "clickable" index. Also, each recipe is in the equivalent of plain ASCII text (no HTML within a recipe) to provide for maximum flexibility for copying and pasting selected recipes into various editors.
