Originally, when I was young, growing up in Carlsbad,NM (1950's) we used to
make the annual trek to Velarde, Chimayo and Espanola, NM for our green
chile. Someone told my Dad about the green chiles in Hatch, NM. So we
started going there for our green chile and thought it had a better flavor.
I did not start hearing about a "Hatch green chile" til about 1975. It
always referred to the green chiles grown in Hatch, NM, not Las Cruces or
Deming. Currently, with all these foreigners living and moving to New
Mexico, I don't have any idea what it refers to. Everybody sells "Hatch
Green Chile" in Albuquerque, NM, even the trucks from Mexico in the
fleamarkets. So who knows where the chile comes from. In all probability it
is NOT what we used to call Hatch green chile. Best bet is just drive to
Hatch ( its right off of I-25 South between Tor C and Las Cruces) and go to
a chile farm near Hatch and buy some. Perry
