Take a nice husky poblano and take a good slice off one side, leave
the stem attached because it's pretty. You want a "boat." Remove the
seeds. The slice you took off (from stem end to bottom) you can dice
and saute with garlic, and minced onion. Cool that. You can always use
a hotter chile in the saute mix. Mix up some cornbread, you can even
use Jiffy Mix and add the cooled saute mixture. Or if you're in a
hurry just miss the saute part and use the cornbread batter. Put the
batter in the poblano and bake according to the cornbread directions.
Makes a pretty presentation for you cornbread and the poblano is tasty
too.
