OK here's mine: Coffee Poplano Sauce which I nicked from http://fooddownunder.com/cgi-bin/recipe.cgi?r=71310 I have made some notes in how I do it different. I really enjoy this with game like kangaroo, wallaby and venison. If using for venison, I also add in 1 heaped tablespoon of homemade quince paste. Warm & zesty alternative to BBQ sauce! Title: Coffee-Poblano Sauce Keys: Chiles Sauces Pest Yield: 1 Servings Ingredients: 1 lrg Poblano chile [ME: I use 2] 2 tbl Olive oil 1/4 cup Onion, minced 1 tsp Tomato paste 2 1/3 cup Canned beef broth [ME: homemade veal stock] 2/3 cup Fresh orange juice 2 tbl Fresh lime juice 2 tbl Golden brown sugar 2 tbl Mild-flavored (light) molasses 2 tsp Instant espresso powder [ME: shot of espresso] 2 tsp Orange peel, grated 1 1/2 tsp Lime peel, grated 1/2 tsp Cumin, ground 2 tsp Cornstarch 2 tsp Fresh cilantro, chopped [ME: I alternate with flatleaf parsley] Method: Roast and peel chile. Peel, seed, and finely chop. Heat oil in heavy large saucepan over medium heat. Add chile and onion and saute 3 minutes. Mix in tomato paste. Add 2 cups broth, orange juice, lime juice, sugar, molasses, espresso powder, orange peel, lime peel and cumin. Boil gently until reduced to 1 1/2 cups, stirring occasionally, about 20 minutes. Mix cornstarch and remaining 1/3 cup broth in small bowl. Add to sauce and boil until slightly thickened, stirring frequently, about 2 minutes. Mix in cilantro. Can be made one day ahead.
