[CH] Making sweet hot sauces

Branching out from my previous endeavors, I'm considering using some of 
the 15 quarts of sour cherries I was gifted with (look back in the 
archives about a month) to make a hot sauce with cherry and honey 
flavors. What do I need to take into account in making a sweeter hot 
sauce, both in terms of preparation (pH level among other 
considerations) and preservation?
