Hi Jim, about your toys. I have gotten into sourdough over the last year 
or so, and I use my scale for all measures when making bread. In fact, I 
have a mix on the go at the moment, measured the starter, water, flour 
until it was all wet, covered it and let it sit. Now it will get more 
flour, both whole wheat and unbleached white, filtered water, dash salt, 
and into the Kitchen Aid on slow for 10 minutes to knead, then into the 
fridge for 24 hours. Out tomorrow, let rise again and bake! GREAT sourdough!
When using the scale(not the same brand)I zero after every addition, so 
that my measurements are true. I get wonderful sourdough bread, and with 
this loaf, I am going to add some smoked hab powder just to see how it goes!
