      Title: Amy's Mexican Chicken
 Categories:
      Yield: 6 Servings

      4    chicken breasts, broiled
           - and cut up
     1     corn
      1    green peas
      1    kidney beans, mashed
    1/2 c  canned diced tomatoes
           - and green chilies
      1 c  instant potato flakes
      1 T  picante sauce (mild, medium
           - or hot)
      3 c  shredded cheddar cheese
      2 t  salt

 Broil the chicken breasts ahead of time and cut them into chunks.  Mix
 the chicken and the rest of the ingredients, except 1 1/2 cups of the
 cheddar. Spread the mixture in a large, shallow rectangular pan.

 Sprinkle the rest of the cheddar over the mixture and bake in a 350
 degree oven for 30  Broil the chicken breasts ahead of time and cut
