I was reading Sara Foster's Casual Cooking and saw a "recipe" (more like a description) of something that sounded just great - Fried Egg & Salsa Quesadilla. So, I adapted the idea - * Exported from MasterCook * Fried Egg & Salsa Quesadilla Recipe By : adapted from Sara Foster's Casual Cooking Serving Size : 1 Preparation Time :0:00 Categories : Breakfast Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 multi-grain tortillas 1 egg 1 tb hot salsa 2 tb shredded monterey jack cheese fresh cilantro In a small skillet over MED heat, heat the tortillas until they are warmed through. Set aside in some tin foil. Add a drizzle of oil to the pan and fry the egg. Remove egg to a plate. Put 1 tbsp of the cheese on one tortilla. Top with the egg, some salsa, cilantro and then more cheese. Top with the other tortilla. Put a drizzle of oil in the skillet and then the quesadilla. Fry the quesadilla until browned on both sides and the cheese has melted. Attack! - - - - - - - - - - - - - - - - - - NOTES : Original recipe calls for freshly chopped tomatoes and chopped herbs (parsley, oregano or basil). Also it says to use 2 eggs. For one person I would use 1 egg, unless there is a big appetite to fill. Just delicious! Mmmm... RisaG
