Greetings from a long term CH-List lurker & occasioanl (OK, rare) poster. My mostest favoritest chile paste for adding to soups, stir frys & such was Huy Fong's Sambal Badjak. I even sent some to Kristofer Blennow (Sweden) back in 1999. I've tried the pastes from Koningsvogel (Holland) & Kokita (Indonesia), but these are POOR substitutes for the Huy Fong product. They just don't have the perfect mix of smokiness, combined with the rich roasted chile flavor that I loved in Huy Fong's product. Does anybody have a recipe for a good Sambal Badjak, that comes close to the taste of Huy Fong's product? I've got a bunch of recipes off the errornet, but haven't tried any yet.
