Risa, I make whipped sweet potatoes with chipotle in adobo every  
thanksgiving. It rocks. Do try it. You are right the smokiness is  
fabulous with the sweet potatoes.
I originally made the sweet potatoes sliced thinly with the chipotle  
in adobo and we liked it just fine. I used a Bobby Flay recipe. But, I  
started playing with the ingredients and ended up with the whipped  
sweet potatoes. We like it much more. Something about the smoothness  
of the potato along with the spiciness.
