Hey Rael,

Lemon grass is easy to grow.
If you happen to order a bunch of stalks again
stick them in a jar of water.
After a week or so they'll start to put out roots.
(You can grow it from seed, but I've never tried it
so you mileage may vary)
I grow it in containers and take it indoors during the winter.
It grows sorta like bunching onions giving me a never
ending supply of free lemon grass.
A nice addition to the free Thai peppers grow from seeds.
