We normally just put packed-in-oil sardines onto toast (a good whole wheat
of course -- the point is to have nice flavor) and eat like that with bites
of fresh serranos.  But addition of a little lemon or onion seems like a
nice thing.

Hmmm, fresh serranos eaten out-of-hand pretty much taste great with
everything, don't they?  (And many of the C. baccatums do, too.)
