This was tonight's dinner. It was quite delicious and different. Of course, if I was making this for real chile-heads I would've used a lot of chile - dried and crushed and hydrated BUT I was making this for Trev and Steve so I used some cayenne and some plain chili powder. It was very good but could've been a lot spicier. I dripped some hot sauce on top. Chunky Pumpkin Vegetable Chili 1-28 oz can crushed tomatoes 1/2-15 oz can pumpkin puree 2 tsp chopped garlic 2 tsp cayenne pepper, or more to taste 1 tsp chili powder 1 tsp pumpkin pie spice 1 tsp salt, or to taste 1 tsp ground cumin 1-14.5 oz can diced tomatoes 1 can Bush's Grilling Beans* 1/2 cup canned green chiles 1 zucchini, chopped 1.5 cups onion, chopped 2 Light Life Vegetarian Sausages, sliced & browned** Add crushed tomatoes, pumpkin, garlic and all seasonings into the crockpot (which is lined with a Crockpot Liner). Mix well. Add diced tomatoes, Grilling Beans, chiles, zucchini and onions.Cover and cook on HIGH for 3-4 hours or on LOW for 7-8 hours. Risa's notes: * original recipe called for 1-15 oz can chili beans and 1-15 oz can black beans. I used a 20 oz can of Bush's Grilling Beans instead. ** original recipe did not call for the veggie sausages. I browned them in a pan and then added them to the chili in the last 1/2 hour.
