[CH] Tonight's Dinner: Sriracha & Spam Fried Rice

This was dinner tonight. It came out very good. I added some bamboo shoots to the vegetables and it added a bit of the extra Chinese flavor to the dish. I also used reduced sodium soy sauce to cut the sodium a bit since SPAM is high in sodium, and Sriracha also has some. Not an every day dish. Everything in moderation but once in awhile, not a bad dish. It was surprisingly good.

1/4 cup Sriracha sauce, and more for garnish
3 tbsp reduced sodium soy sauce
2 tbsp vegetable oil, plus
1 tbsp toasted sesame oil
1-12 oz can Spam, diced
1/2 cup frozen corn kernels
4 cups cooked rice, cooled
2 eggs
1 clove garlic, minced
1 can sliced bamboo shoots, rinsed, drained and dried*
sliced scallions, just the green part, for garnish

In a small bowl, whisk together the Sriracha and soy sauce. Reserve.

Heat a wok over very HIGH heat until it is smoking. Add 1 tbsp of oil to the wok and let it heat up until it shimmers. Toss in the SPAM and corn and cook until the meat begins to brown, 3-5 minutes. Add an additional tbsp of oil to the wok and heat for 10 seconds. Add the rice, stirring to coat each grain with oil, and stir fry for 3 minutes.

Move the rice mixture towards the outer edges of the wok, creating a "well" in the center. Add the remaining tbsp of oil to the center of the pan, and heat until it shimmers. Add the eggs and garlic, and stir fry feverishly until the eggs are cooked through and then drizzle with sriracha mixture. Toss everything together to combine, cooking for an additional 30 seconds or so.

Mound the rice into bowls, garnish with sriracha and scallions (and cilantro if you wish) and serve immediately.

*I added the bamboo shoots to add a bit more oriental flavor to the dish.
