Well, I just finished cleaning up after making the hot sauce.  As careful
as I was, seems I still got Hunan arm (right arm from wrist to 1/2 way to
elbow on fire as I type ... and despite the gloves, fingers on both
hands).

Anyways, on the pH topic....  4.5 is ok, right?  Well, it was 3.42.  :-)
I don't think any micro-nasties are going to grow in that.  :-)

PS:  I ran out Friday morning at breakfast...I FINALLY have a new batch.
     I had to substitute tabascos for cayennes (at 425g of tabasco vs
     725g of habanero, I don't see it making a big difference, and if it
     does, it'll be on the good side <grin>).
