First off... allow me to correct the misspelling. It's Sriracha...... My bad.... I'm a lazy sort so I don't always get too fancy when I do tacos. Lately I've been spraying the corn tortillas with oil spray on both sides prior to popping them in the toaster oven to crisp up. Works! Today was a good example of a mixture of forethought and laziness. Yesterday I roasted a couple of turkey thighs and today I made tacos. So it was chopped and or shredded turkey folded into a crispy corn tortilla with cilantro, siriracha, salt and pepper... I was too lazy to dig through the fridge and find the tomatillo sauce I made or the frisee or lettuce, They were in there, I know they were. I remember sending them off into the darkness sans bread crumbs. Chopped tomatoes? Chopped onions? Arugula and dill would work. Joe P.S. To say nothing of flour tortillas and turkey which is another story involving turkey stock and roux. Or was that mole?
