When they get past the pinfeather stage, then they are fair game for "Dillo 
wings"-
The tasty bits are hard-shell-tempura fried with Chile Tepin dust, then 
dipped in a Sauce formerly known as Tartar, where the relish/ pickle is 
replaced by minced green chile of choice; heat adjustable from Wild to 
Nukular...
