Goto www.foodtv.com and get the recipes for Emeril's spices. You'll
also get his "Essence" (creole seasoning) and "Rustic Rub" along with
the "Southwest" There is no charge for this (Unlike Paul Prudhomme and
other TV chefs) other than the cost of the ingredients to make a
batch.

Of course, they *could* be persuaded to sell you some pre-made. If you
insisted and raised a lot of hell about it.   <GGG>
