Shochu is a Japanese style "vodka", often made from rice wine. It is 
not as high in alcohol as the western style, since that is not 
considered "appropriate". Would guess 12-25% (25-50 proof). 
Substitute with some diluted liquor... seems to me that a fine 
bourbon would make a nice version...  :)
