Low heat drying preserves the vitamin C in Chiles but does not kill insect 
eggs. We store (in the freezer) all ground Chile flakes and powders in 1/2 
gal. mason jars. This will kill any little insect eggs that could hatch and 
eat the Chile powder. Transfer to a small jar or shaker top bottle for every 
day use, refill as needed. Use large plastic bags to freeze whole dried 
Chiles also.
