Firehouse-
Ham & Cheese Chowder (2 cups diced cooked ham):

2 cups water
2 cups diced potatoes
1/2 cup chopped carrots
1/2 cup chopped celery
1/2 cup chopped ripe chiles, seeds removed
1 tsp salt
1/2 tsp white pepper
Combine above in large kettle. Boil 10-12 minutes. Cover and set back.

White Sauce:
1/4 cup butter (or marg. or extra virgin olive oil)
1/4 cup flour
2 cups milk
2 cups shredded cheddar
Melt butter in small saucepan. Add flour and stir until smooth.
Slowly add milk, cook until thickened. Add cheese to sauce and stir in.
Add ham and 1 more cup water to veggies and bring back to a boil, then
stir in sauce.
Heat thoroughly, stirring regularly.
