I think of using leftover ham for:

Montecristo Sandwiches
Fried Rice
Western Omlets/Sandwiches
Add-ins to au-gratin potatoes
Fritatta/quiches
Ham and cheese sandwiches
Deviled ham sandwiches
Ham and mellon
Soups
Adding to Macaroni and cheese, perhaps with peas

I sort of cook by the seat of my pants when it comes to leftover
stuff.

There's that chicken cordon bleu thing that uses some ham.

There are a bunch of recipes for ham stuff at the epicurious site.
