Dave...

Well. Went there - had been there before but didn't realize all the
many chili recipes. A very nice site. VERY nice!

However, you can't do a search for specific ingredients, you've got to
go by the names of the Chili recipes. At this point, while actually
cooking the chili, the site wasn't too much help. If anything, more
confusing!

But I did get some info there and wrangled things around in my mind.

The chili's fairly warm/hot, to my standards, and still needs more cumin
(I ran out... Yea. Gotta start buying even more in bulk...) and
tomatoes, and prolly onion and garlic, too, but I think ittiz gonna be
good. A musky, heavy, smokey chili - NOT your average mom/pop
tomatoe/taco seasoning chili - very flavorful, just what I was looking
for. Will serve with goat cheeze, cilantro and cut up onion... and
maybe some cut up tomatoes, depending upon how many more I add.

The following are the ingredients to date, and if anyone's interested in
how I put them together, I'll be very glad to let you know if you e-mail
me privately. I'll eventually, most likely, get the recipe here... But
don't know when.

3 lrg country-style pork ribs
1 lb (approx) sirloin roast, cubed
4-5 strips bacon (thick sliced/smoked), cut in 1/2
some lard now and then
flour
1/2 tbs Mexican Paprika
1/2 tbs Hungarina Paprika
1 tsp Calvin's Powder
1/2 tsp chipolte powder
Splash o'beer (Goose Island Oatmeal Stout, this time... ;^)
2 large yellow onions, coarsely chopped
6 cloves garlic, pressed
2 tbs cumin
1 tbs ancho powder
1 tsp Calvin's Powder
1 tsp Hungarian Paprika
1 tsp Mexian Paprika
1 can chipoltes/adobo sauce
Couple immature Waxies/Hungarians from the garden
2 large, very ripe tomatoes
1/2 pkg black beans, soaked
