Kristofer,

  I had done the chili-at-work thing, and it has been my experience that a
double batch works best.  A little more work on your part, but you are right
about adding hot sauce.  It does change the taste.  I usually use two
crockpots and label them appropriately.

  As for the accoutrements, I would use crackers, bread or flour tortillas.
Since my chili has a fair amount of masa harina, the flour tortillas go very
well with it.  Good luck with whatever you decide.
