"Classic chili" means different things to different people.  I've seen

I don't put beans in (or on) my chili, but I sometimes serve it with the
following (depending on which type I make and how hot it is):
shredded cheese
saltine or oyster crackers (I don't use them, but guests really like them)
sour cream (especially if it's really fiery)
chopped onion
chopped hot pepper
hot sauce
nice, crusty bread
