A nasty, dusty morning in the kitchen today, as I ground up the habaneros I
hickory-smoked the other night. I thought of Jim's big grinders he got
from a grocery warehouse as I ran my 1960s Peugeot Inox coffee grinder (old
enough to have no safety switches; it can run with the lid off). This year
I incinerated only a few of the peppers, but since I was getting concerned
and impatient I took them all off the grill and let them finish in the oven
overnight. I stemmed them and gave any loose seeds a chance to drop out
before grinding. I sifted the flakes and whole seeds out of the powder,
and now I have several ounces of a roasted hab powder similar to Jim's but
with a hickory flavor instead of apple.

As for those heatless jalapenos, they make me wonder - will someone make
heatless chipotles?
