A Texas tradition is blackeyed peas on New Years. Brings luck in the coming year (or so my friends from Texas assure me). Try this: make New Mexico green chile stew, but substitute blackeyed peas for half the white beans. Recipe available in the chile-heads archive (or via e-mail on request).
