Here's the skinny on Ketchapeno, which Chef David Schy developed about a decade
ago when he was
with a now-defunct Chicago Mexican restaurant called Hat Dance.    Unequaled on
a fried-egg sandwich,
 in my estimation, or in Sloppy Joes or on a cheeseburger  or in cocktail sauce
for shrimp
or calamari (as noted below) or anywhere one would customarily use regular
catsup, really.    Good stuff.
