Someone correct me if I am wrong (and I'm sure y'all will B-) ), but I
believe Mr. DeWitt and Ms. Gerlatch(sp) said in 'The Whole Chile Pepper
Book'
that green, fresh chiles carry the enormous amounts of Vitamin C that made
them replace citrus fruit on board ocean going vessels to combat scurvy and
that red, fresh chiles and dried chiles have a negligible amount of Vitamin
C, but large amounts of Vitamin A.
Comments anyone? Anyone? Bueller? Bueller?
