.....Sorry, this isn't an answer but a similar question.  I have been
wondering how one can make us of fresh garlic that has begun to dry out and
become a bit hard.  I usually just through it out if I can't cut it.  Could
this be completely dried and then ground into a powder?  I don't want to
dry fresh garlic in the dehyrator until I have to as I prefer fresh but
don't want to waste any of it either.  I mean, commercially they must just
dry and grind, right?


Actually, my peppers kept in the fridge for weeks.  It will also depend on
whether or not they have any soft spots, if they are stacked on top of each
other and whether or not they are all ripe.
