When I started to type this to you , I suddenly thought, Cheez, are
there 63 other Raels cooking in this world? Supreme Chili Head help us!
Thank you for the kind words of yesterday, and yes my wife of 49 years,
is a gem and she loves my cooking, as I love her baking(when she does
it) other than bread, which she does all the time...as I mentioned, I am
diabetic, and this paragon of virtue to whom I have been married for 49
years, and known for 51 yrs, watches my sugar intake like a drill
sargent!( I suppose she wants to keep me for another 49 years, GOOD
LUCK) anyway, as I also mentioned, I cook something different every
night, sometimes we have left overs and then we have it two nights later
and tonight it was fish...take about two lbs of fresh cod, or a like
firm fleshed fish, sprinkle with flour, salt and cayenne pepper, both
sides and let rest in fridge..Make sauce...3 fresh tomatoes, peeled and
chopped, 2-3 Jalapenos, seeded and chopped, 1 medium onion, chopped, 3
tablespoons of shredded fresh ginger at least, 2 finely chopped garlic
cloves....little chicken stock...simmer until thick and vegs cooked..add
flour if too thin. Meanwhile, take fish, and fry in a little olive or
peanut oil, until browned both sides, put in a warm oven while the sauce
cooks....serve with rice, and with a broccolli and cauliflower stir fry.
LIKE WoW, even Hendrix would be impressed! Cheers, from the Old Man Of
B.C. Doug Oh, salt and black freshly ground pepper to taste.
