It's a practice originated in Jamaica.  It involves coating, marinating, or
basting meat in a sauce made from Scoth Bonnets, pimento, scallions and other
spices.  The meat is then slowly cooked over a pimento wood charcoal fire.

they're tough to get in most places in the U.S. (for now)
