Hello all,

Just wanted to leave lurk mode and introduce myself to the group. I've been
lurking for a couple of weeks now, and this seemed like a good time to post,
because I love Nopales and Jeannine said something that caught my eye:

Actually Jeannine, they're wonderful, but then again I've never had the ones
you mentioned. I buy Maries, which is seasoned with Onion, Cilantro, and
Jalapenos. I've included a recipe for an awesome cactus saled that I hope
you all will enjoy. I don't include amounts here, because taste vary, and
anyway I seldom measure.

Maries Cactus (I use Maries because I think it's the best, but if not
available, any jarred cactus will do. like Jeannine said, fresh ain't half
bad either!)
Purple Onion(s) chopped
Fresh Cilantro, chopped
Tomato(s)  cut up
Pepper(s) use any you prefer, in any amount you prefer :^) finely chopped
(minced?)
Feta Cheese, crumbled
Italian Dressing

Rinse cactus, drain and place in bowl. Add remaining ingrediants and mix it
all up.
Pretty simple eh? You'll love it though!
Leave out the peppers and use it as a nice "cool you off salad" with that
other spicy fare, or leave in the peppers because, well...we're chile heads,
right???
