Speaking of turkey
   For the last several years we have prepared our turkey with David's Devil
Dust from Salspray company. We take the frozen bird out of the freezer and
unwrap it. Then rup the bird down with a healthy amount of the dust. Wrap the
bird back up with saran wrap and set in the fridge for the two or so days that
it takes to thaw. All the time the dust is working its magic. When it is time
to cook proceed as normal. This preparation leaves the meat itself very
flavorful but not hot. The skin and fat holds all the heat. You can serve the
un hotheads the meat without skin. Also I make a gravy to satisfy the hot end
of the spectrum by using the drippings and then adding back several shakes
more of daves DD. The peppers in DDD are Chipotle and Habanero. Life truly is
good. We start getting request to cook the turkey "that same way you did it
last year" starting several months before the big T day
