 Wow, the 18 months of hell I spent in Jakarta weren't a total waste: 
"Serai" is lemon grass
"Lengkuas" is similar to ginger root, called "Greater galangal"
"Babi panggang" is roasted pork.
Sorry, I can't help you with the "extra" vinegar or an internet source
for the above.
