I've been using the Camaro method of drying the last couple months. The
Camaro parked in the sun with the windows up. Since it got to about 98
degrees here yesterday, it dried split jalepenos in about 12 hours. A
few minutes in the oven at 250 to crisp them, and they powder just fine
with a coffee grinder.
I've been using various powdered (green and red jalepenos, chipotles,
habs and blends) and/or sauced chiles (chopped and heated in a
vinegar-water solution and blended to pouring consistency) instead of
salt on the table for about 6 months. Nobody else I know likes them, but
I even take them to restaurants. The red jalepeno powder does wonders
for country fried steak....
