I'd like to tag onto this with an additional question.  I'd like to
bottle/can some of my salsa when the peppers come in.  I use a small amount
of avocado in my recipe.  Is this a problem?

I've been looking for few recipes to make salsa which can be bottled.  Has
anyone tried anything like that?  I want to use chile powder and fresh
tomatoes, bell peppers and onions.  Basically a cooked salsa.  I've tried
making up a few, just a little worried about the shelf life part.  Any tips?
