My faves are:

Serranos, for heat AND flavor
Anchos and Poblanos, for flavor alone
I agree that Aji Amarillos are wonderful - heat and flavor.
Also, chipotle (but we know that they are smoked red jalapenos).

Lately I'm very disappointed in jalapenos as they have flavor but NO heat at
all anymore. I guess my supermarket only buys the heatless ones. Horrible.
