Greetings-
I've grown Datils for about 8 years. They turn from green to light
green to lemon-yellow & then (usually) the yellow darkens slightly.
If you have the HSV color-picker on your Web browser, call it up &
set the color angle to about 38 degrees...that's a pretty close
match. IMHO, Datils are ready to use when they reach a full
lemon-yellow. Darker ones may be very slightly sweeter but it's hard
to tell the difference.

My really mature Datils often develop 2 or 3 very slight bulges from
top to bottom instead of remaining completely conical, reminiscent of
a rattlesnake rattle! See the last image in my small gallery at
http://www.phys.ufl.edu/~dunnam/Chilie02.html.

Best wishes,

Gene
