[CH] Tonight's Dinner - Shrimp Boil

This was tonight's dinner - Shrimp Boil. It was
delicious. Not overly hot as I didn't use a ton of
small chiles in the boil mixture. But I served it with
hot sauce (there is always at least 9 bottles on the
table).

It was delicious. I should've used larger shrimp. The
only complaint really.

                            Risa's Shrimp Boil

  20      med           shrimp
   2      ears          corn -- cut in halves
                        Boil Mixture:
     1/2  gallon        water
     1/2  oz            black peppercorns
   5                    dried chiles -- * I used
pequin
   2      lg            shallots -- quartered
   1                    lemon -- quartered
   3      lg cloves     garlic -- peeled
     1/4  cup           kosher salt
                        Added:
     1/2  pkg           Zatarains Crab Boil
          dash          worcestershire sauce
          dash          Frank's Extra Hot Hot Sauce
   1      can           beer

Place all boil mixture in large pot. Bring to a boil.
Add corn and cook for 3 minutes. Add shrimp and cook
for another 2-3 minutes until no longer grey in color
and are completely pink.

Drain. Serve 1/2 of the shrimp and 2 pc corn to both
people. Serve with more hot sauce.

NOTES : Risa's notes:

I am able to get really good local corn - unusual
varieties - and I use that in this dish. Makes for a
more interesting dinner. Use what you can get but make
sure it is really fresh. Do not use frozen corn on the
cob in this dish.

If you wish, make some baby red potatoes with this
too. Place them in the boil mixture first, cook for
about 18 minutes and then add the corn, then the
shrimp. Drain well and serve a little of each to
everyone. I made no potatoes.
