Don't cook it past medium rare if you can help it or it will dry out and get tough and stringy. All venison (be it deer, antelopes, elk or moose) is very lean and can benefit by addition of beef suet in the cooking process ... or slow moist methods of cooking. Not, tough really. You said you had a "tube steak of antelope". Around here a tube steak is also known as a hot dog or frankfurter. What is it that you have? Maybe a tenderloin? BTW - chipotle based rubs do VERY well on venison. Bv)> ENJOY!!! Uncle Dirty Dave's Kitchen Home of Hardin Cider & Yaaaaa Hoooo Ahhhhh Hot Sauce!!!
