This is one we've been doing at the firehouse for a couple of months
now:

4 large Nex Mex
2 large sweet onions- halved
2 large garlic cloves (whole)
1/6 dozen large Roma tomatoes
3 Jalapenos (the guys are wimps ;-)  - seeded & topped
1 bunch of cilantro
4 tomatillos (optional)

Throw everything except the cilantro on the grill.  Keep it on there
till there are large char marks on all sides of it.  Spray the grill as
the tomatoes might want to stick a bit.

Put it in the blender and add the cilantro.  Put it on chips and eat
:-)  Pretty simple, but GREAT!

Grilling order:

Onions first- they take the longest.  Give them about a 5-7 minute head
start.  Garlic next (3-5 minutes ahead of next ingredients).  Then
tomatoes & tomatillos.  Chiles take the least amount of time.  Don't be
afraid to let the char marks get heavy!
