I dry mine entirely in the Little Chief. Takes between 1-2 days (depends on outside air temps, chile types, smiling gods, etc.) Usually I use apple, cherry or hickory for the wood with a slight preference for apple over the cherry and the hickory if I have nothing else. I've never had a problem doing it this way. Wondering if the remaining Chocolate habs have a chance to ripen ....
