We just went through about 300 of em last weekend at the American Royal BBQ. What we do is halve the Jals, scoop them out, fill with cream cheese, top with a little smokey, wrap in bacon, toothpich the whole thing, and put it on the smoker for about 2 hours @ 250 F.
